It's that time of year again; we start reflecting on the past 12 months and start looking forward to the next. As we get ready to turn the page on another year, I'd like to wish you all the very best in 2017. May all your hopes and dreams come true beyond your wildest imaginings!
I try not to make resolutions, but I do like to make plans (is there really a difference?). Since beginning with Epicure almost three years ago, I have noticed a definite shift in my eating and cooking patterns. I still have days where all I want is a big greasy bag of chips - but most days, I happily choose fresh, natural, unprocessed food instead.
Here's a pretty salad to help you ring in the new year. Enjoy! (I've made my version gluten-free and dairy-free.)

In a pretty bowl, or on individual salad plates, arrange the following (be as creative as you like):
- 1 head of romaine lettuce - chopped or torn into bite-size pieces
- 2 carrots - grated or shredded
- 10-15 snap peas - cut in halves
- 1/4 red pepper - diced
- cilantro - torn into small pieces
- candied almonds
- 1/2 cucumber - chopped or spiralized
- 4 green onions - diced
- There are lots of great dressings that would work with this. I would recommend Epicure's Balsamic dressing (it's my favourite) if you don't have the ingredients to make Ginger Almond Dressing.
