They were simple to make and look SO beautiful!! I used Epicure Apple Pie Spice. First cut a red delicious apple from top to bottom in half and core it. Then lay it flat and thinly slice both Apple halves. Place the apples and the juice of 1/2 lemon (about 1.5Tbsp) in a bowl, cover the apples with water and microwave for 3 minutes. Drain and set aside. Defrost one frozen puff pastry and cut in four even lengths. In a small bowl, place 3 Tbsp of apricot (or any other fruit) preserve and 1.5 Tbsp water, stir and microwave for 1 minute. Spread the preserve mixture over each length of pastry. Place the apple slices flat, red side out, along the top half of the pastry, overlapping each piece about half way. Sprinkle with Epicure Apple Pie Spice. Then fold the bottom half of the pastry up onto the apples and roll beginning at the end you started with. Place in muffin tin and bake at 350 for 40 minutes. Cool on wire rack, then sprinkle with icing sugar. Easily impress your friends and enjoy!!
