What do you get when you have leftover salsa, frozen prawns, and feta cheese in your fridge? Amazing flavours melded together; the spice was evened out by the salt in the feta (the beer helped too) giving just enough texture and kick. I served this with rice, which also helped soothe the spice a bit.

- 2 tbsp EVOO
- 1 medium onion, diced
- 1 (or more if you wish) clove of garlic, pressed or diced
- 1/2 tsp Spicy Chili & Oregano Dip Mix
- 2 cups prepared salsa (tomatoes with Poco Picante Salsa)
- juice of one lime
- splash of beer if you happen to have one on hand
- 1 bag raw prawns, tails removed
- feta cheese, mozzarella cheese, etc.
Method:
- Heat the olive oil, add onion and garlic and cook for about 5 minutes
- Add the Spicy Chili seasoning and cook for 1-2 minutes more
- Add the salsa and cook for 5-8 minutes, letting the liquid reduce
- Add the lime, beer (optional), and the prawns. Cook only until the prawns turn pink
- Serve on rice with feta and/or mozzarella cheese
