For Christmas this year, my youngest daughter asked for chocolate instead of the usual pumpkin or eggnog cheesecake. I'm always happy to oblige when the answer (or the question) is chocolate! Epicure's Chocolate Velvet Cheesecake to the rescue!
For the icing, I used our Vanilla Bean Pudding mix as a stabilizer, mixing it in with the whipping cream along with a bit of icing sugar. This allowed me to decorate the cake with the icing, something I wouldn't be able to really do with whipping cream alone.
I used 1/2 litre of whipping cream with 1/2 package of pudding and 2 tbsp of icing sugar to taste. Sorry this isn't very exact; next time i do this I will pay more attention to the amounts.
