I don't have a photo, but trust me, scrambled eggs with ricotta cheese are simply sublime. I know I'll be making this again, so I'll make sure to get photographic evidence of the recipe. Until then, enjoy this simple and delicious way with eggs.

- Whisk 4-6 eggs in a glass measuring cup. Add 1 tsp water & 1 tsp Fines Herbes.
- In Epicure's 10" frying pan, melt 1/2 tsp butter (or spray with a vegetable spray if you wish). I love the added taste that bit of butter gives. I like my eggs to cook on medium-high heat (5 on my gas range).
- Pour the eggs into the heated pan and cook for a minute (don't stir yet)
- Add 1-2 tbsp soft ricotta cheese. Let cook without stirring again for 20 seconds or so. When the sides of the eggs firm, mix with a spatula. Don't let these overcook.
- Serve with fruit, toast, or just a really good cup of coffee.
