The original recipe for this delicious salad can be found here. I used Epicure ingredients to make this for tonight's dinner. It was absolutely divine!
Roast the following at 400 for about 12 minutes:
Drizzle with grapeseed oil and add Epicure's SPG.
After ten minutes, move the vegetables to the side and add shrimp (also drizzled with oil). Roast for 10 minutes more.
To prepare, place mixed greens into two bowls and arrange the vegetables and shrimp. Drizzle with chili-lime dressing (below).
To prepare chili-lime dressing, squeeze one lime into a small bowl, add 1/2 tbsp of grapeseed oil and 1/2 tsp Epicure Chili powder.

- about 12 sliced grape/cherry tomatoes
- two thinly sliced carrots
- 1/2 red onion, in large chunks
- 10 or so asparagus, tough ends removed and then broken into halves/thirds
- one red pepper, in large chunks
