The wonderful aroma from this subtle curried soup will fill your house. From start to finish, this took about 40 minutes. I can't wait for tomorrow's lunch as I imagine the flavours will blend and deepen even more.

In a large pot:
- Melt 2 tbsp coconut oil; add 1 diced onion and 1 tsp minced garlic. Let saute for a couple of minutes (until the onions are becoming transparent).
- While the onions are doing their thing, hydrate 3 tbsp Le Taj Secret Sauce in 1/2 cup water.
- Add 3 small cubed potatoes, 1/2 cauliflower (small florets), 1 can lentils, and the hydrated Le Taj. (I also added 1 tsp Tandoori for a bit more kick.)
- Add 3 heaping tablespoons of Vegetable Bouillon and enough water to cover (about 4 cups for me).
- Cook on medium heat for about 20 minutes (until the potatoes are soft, but not mushy).
- Add 2-3 cups spinach leaves. Cook for 1-2 minutes.
- Serve & enjoy!
