- Boil 4-5 potatoes, cut into bite-sized pieces (I like leaving the skin on, so I scrub and then cut)
- Boil 3-4 eggs (peel & cut when cool)
- 6-8 pieces chopped bacon, cooked and drained
- 1/4 red onion (or less), chopped finely
Assemble in a pretty bowl. Mix up the dressing:
- 3/4 cup light mayo
- 2 tbsp Spicy Mustard
- 1 tbsp Honey Mustard
- 1 tbsp Cheese, Chive, and Bacon dip mix
- 2 tbsp red wine vinegar
- salt & pepper to taste (sugar, too, if you think it needs it)
Combine with potatoes and let sit in the fridge to let the flavours start to dance with one another. Top if you wish with Smoky Bacon Topper.
