I must be craving summer - this is my second "Summer Berry" recipe makeover in a short time.

I topped mine with whipping cream and berries. Really, the possibilities are endless.
Meringue Ingredients:
- 4 egg whites (3/4 cup)
- 1 cup less 1 tbsp sugar
- 1 tbsp Summer Berry
- 1 tsp cornstarch
- 1 tsp lemon juice
Directions:
- Preheat oven to 225
- Mix egg whites on high speed until they are frothy
- In thirds, add the sugar & Summer Berry
- Continue to beat until stiff peaks form
- Gently fold in the cornstarch and lemon juice
- Place on parchment paper or silicone baking sheet in small circles (I make eight, but you could increase or decrease depending on the number being served)
- Bake at 225 for 1.5 hours. If they seem to be cooking too quickly, turn them down to 200 degrees after about 20 minutes. They should be dry, but not brown.
- Cool on a rack.
