This was modified from the Speedy Lasagna found at www.epicure.com
Ingredients
I made a gluten-free version in the rectangular steamer at the same time as I made a regular one in the square steamer. Enough for all of us.
Instructions
1. In a mixing bowl, combine ricotta cheese and eggs. Set aside.
2. Cover the bottom of the steamer(s) with a layer of sauce
3. Add noodles, thinly sliced zucchini, half the zucchini, half the ricotta and more sauce. Repeat to make a second layer.
5. Top with a final layer of noodles, remaining sauce, and sliced mozzarella.
6. Microwave, covered, on high for 5 minutes, then remove lid and cook for another 7 minutes. (The rectangular steamer took 5 minutes & 6 minutes.)
7. Let stand for a few minutes, slice, and serve with a green salad.

- 6 oven ready lasagna noodles
