I am much more confident as a cook than as a baker. However, my family loves baking, so every now and then I go on a baking wave (often late at night, like tonight).
Tonight's recipe fit perfectly and made rich, luscious, but not overly sweet brownies that don't taste gluten-free in the least. My recipe is adapted from http://fastpaleo.com/recipe/zucchini-brownies/
Mix together the following and bake for 12-17 minutes at 350 degrees:
* 1 cup almond butter
* 1/2 cup grated zucchini
* 1/3 cup honey
* 1 egg
* 1 tsp Epicure vanilla extract
* 1 tsp baking soda
* 1.5 tsp Chai Spice
* 2 ounces dark chocolate squares (melted)
Oil the Perfect Petites as directed and try to get the same amount in each (as much as possible).
Enjoy with a big glass of milk!
