One of my family's favourite muffin recipe is the "Triple Banana Muffins" I posted here. But, my husband (being a Celiac) could only watch as we all enjoyed the muffins. Here is my GF version:
Ingredients - blend together in large bowl:
Then, create a well in the centre and pour in the following:
Finally, mix in the following:
Spoon into prepared muffin pans and top (if you wish) with a banana chip. Bake for 22-25 minutes.

- 2 cups GF flour
- 1 cup Coconut Flour
- 1 3/4 cups sugar
- 1 cup oats (not all Celiacs can eat oats, but my hubbie can)
- 2 tsp Epicure Baking Powder
- 1 tsp baking soda
- 1 tsp salt
Then, create a well in the centre and pour in the following:
- 2 eggs, lightly beaten
- 1 cup margarine, melted
- 1 cup milk
- 2 tsp Epicure Vanilla Extract
- 2 bananas (mushed)
Finally, mix in the following:
- 1 banana, cut into very small pieces
- 3/4 cup coconut
- 1/2 cup chocolate chips
Spoon into prepared muffin pans and top (if you wish) with a banana chip. Bake for 22-25 minutes.
