If there is a better smell than banana muffins or banana bread in the oven, I don't know what it is. I don't often bake, as most of my kitchen time is spent preparing actual meals for my busy and active family. However, when I do have time to blend flour and sugar and other basics together to create magic in a muffin cup, I do. (By the way, these are not low in sugar or fat, so avoid if on a diet!)
This is a quick, no-mixer-required muffin recipe that makes 24 good-sized muffins (make sure you use paper liners). Preheat the oven to 350 degrees.
Ingredients - blend together in large bowl:
Then, create a well in the centre and pour in the following:
Finally, mix in the following:
Spoon into Epicure's amazing muffin pans and top (if you wish) with a banana chip. Bake for 22-25 minutes.

- 1 cup whole wheat flour (you could just use 3 cups white flour)

- 1 tsp baking soda

- 2 bananas (mushed)

- 1 banana, cut into very small pieces
- 1 cup granola (I used Harvest Crunch)
- 1 cup coconut
Spoon into Epicure's amazing muffin pans and top (if you wish) with a banana chip. Bake for 22-25 minutes.
