If you don't watch those zucchini growing, overnight they grow just too much to be able to use for stir-frying. What to do then? Stuff them with yummy ingredients and make zucchini boats!
Mix the following together and place into zucchini halves that have been hollowed out:
(You could also add bread crumbs for some bulk, if you wish)
One side has 1/2 tomato cubed; the other does not. Both have some grated cheddar cheese on top (to fool the kids into eating their vegetables).
Bake at 350 degrees for 45-60 minutes. (Next time, I will boil the zucchini first to speed up the cooking process.)

- 3 pieces back bacon, diced
- 1 tsp El Dorado Secret Sauce mix (not re-hydrated)
- 1 slice onion, diced
