Back before I started my blog, I posted this recipe on my FaceBook page. It's yet another way to use up some of the zucchini you may have in your garden.
Zucchini Bread Bites using the Perfect Petites (I made one batch of petites and two mini-loaves).
Mix together dry ingredients:
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon Epicure cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
In another bowl, mix together:
1/3 cup canola oil
1 teaspoon grated lemon rind
2 teaspoons Epicure vanilla extract
2 eggs
1 1/2 cups sugar
3 cups shredded zucchini
Add dry ingredients, mix until just blended. Spoon into "Petites" and bake for 20 minutes (mini-loaves for 40 minutes).
