Based on Jamie Oliver's recipe
I whipped this up for lunch today. I think that this soup could easily be converted to a cream of tomato soup or thickened down to a pasta or pizza sauce.
Ingredients & Procedures:
* dice 2 carrots and 2 onions. Add to 2 tbsp olive oil with 1 tsp Minced Garlic. Cook for 10 minutes
* Add 1 1/2 litres of hot water with 4 tbsp Vegetable Bouillon, 2 cans of homemade or purchased tomatoes, and 5 whole tomatoes (with the green part on). This part threw me, but I decided to trust Jamie and go for it.
* Cover and boil for 20 minutes or so.
* Add 1 tsp Pesto
* Blend using an immersion blender. Salt & pepper as desired
