I love the days when the majority of my ingredients come directly from the garden.
Dressing:
(You could also add feta cheese, but I wanted a vegan meal tonight
- Lettuce & kale, ripped into bite-size pieces
- 1/2 cup of cherry tomatoes, quartered
- 1/4 raw beet, grated (just a bit is enough)
- 1/2 cucumber, diced
- 1/4 yellow pepper, diced
- 1/4 cup pumpkin seeds
- fresh dill
- freshly picked peas from the pod - the very best part of my garden!
Dressing:
- 1/4 cup balsamic reduction
- 1/4 cup extra-virgin olive oil
- 2 tsp Lemon Basil Aioli
- Freshly ground salt & pepper
