(II'm fascinated with the body's craving for comfort food as the seasons turn and we head into winter. I've been making thick soups, stews, and casseroles to feed my family and keep them warm from the inside out. Tonight, we feasted on scalloped potatoes, prepped in under 15 minutes with Epicure's Ceramic Slicer and seasoned simply with our new "SPG" seasoning. SPG is a beautifully balanced blend of salt, pepper, and garlic. This is the first time I've added it to a dish, and I found it rounded out the flavours with just a bit of pizazz.
To start: preheat oven to 325 or 350 (I also had a ham in the over, so I cooked my dish at 325). Spray or oil your baking dish. (I used a 9x13)
- Using the slicer or a food processor, thinly slice 4 peeled potatoes. Add 1/4 diced onion, 1 tbsp GF flour, and 1 tsp SPG. Repeat a second time. The third layer should just be potatoes and onions.
- Heat 2 cups milk on the stovetop or in the microwave until hot but not scalding. Pour over potatoes.
- If desired (always desired in my home!), add 1-2 cups shredded cheese.
Cook for about 60 minutes. Enjoy!!
