For many years, I thought of kale only as that stuff that decoarted your plate but wasn't really for consumption. With all the talk of it being a "super-food," I've been incorporating it into my diet on a more regular basis. Sometimes, I love it; other times, I kind of cringe and tell myself I'm doing good for myself. Today's method is one of my favourite ways to eat this anti-oxidant magic veggie. Try it for yourself!
- Strip kale off its thick stems and rip into smaller pieces; wash and let drain, but don't dry
- In a prep bowl, combine 1/4 cup extra-virgin olive oil and 1 tbsp Molto Bene Secret Sauce mix
- In a separate prep bowl, combine 1/2 cup boiling water and 1 tsp Vegetable Stock mix. Stir to combine
- Heat large frying pan or Everything Pan (medium heat)
- Add Molto Bene & oil to the pan and let heat for a minute or so
- Add stock and kale to the pan and toss to combine
- Increase heat to medium-high; cover, and cook for 5-8 minutes (until kale has softened
- Serve with or without a splash of balsamic vinegar
