* To noodles, add the following:
- 1/2 cup Asian Peanut Sauce (above)
- 3/4 cup julienned cucumber
- 1/2 cup grated carrot
- 1/4 cup chopped cilantro
- 1/2 cup bean sprouts
Soak rice papers (one at a time) in hot water until malleable. Put about 2 tbsp noodle mix on the paper and roll. Serve with remaining Asian Peanut Sauce.
This is used to hold the filling together and as a dipping sauce.
Mix together with a food processor or hand-held immersion blender:
- 1/2 cup smooth peanut or almond butter
- Juice of one lime
- 2 tsp sesame oil
- 2 tbsp sweet chili oil
- 2 tbsp Epicure Red Pepper Jelly
- 4 tbsp Braggs Liquid Soy Seasoning or regular soy sauce
- 4 tbsp rice vinegar
- 1 tbsp Epicure Asian Stir-Fry Seasoning
- 2 tsp Epicure Roasted Garlic Aioli
Add 1/4 cup vegetable oil in a steady stream while you blend.
