Easy and delicious potato corn chowder:
* saute 1/2 diced onion in 1 tbsp oil or butter (I like the added flavour of butter)
* add a pinch of saffron if you have it
* add about 3 cups (8 small-medium sized) diced potatoes, cook for about 5 minutes and then add 2 cups milk, 2 tbsp #Epicure Chicken Bouillon, and water to cover
* cook at medium heat for 20-30 minutes or until potatoes are soft (don't let them get to the mushy stage)
* add 1/2 cup cream if you wish
* add 1/2 - 1 cup frozen corn
* cook another 5 minutes or so and then serve
