There are many things that a person on a gluten-free diet has to give up: those easy noodle packages are just one. Imagine my delight when I found gluten-free ramen noodles at Costco earlier this week. I had plans to make pulled pork, but instead I decided to make a simple ramen dish.

* Thinly slice pork loin & marinate in the following simple mix:
* Cook the pork in a skillet (this won't take very long)
* Add raw or slightly cooked vegetables (I used red pepper, mushroom, and green onions. The kids got cucumbers.)
