Have you ever had a Friday when you come home from work looking for something easy and quick to snack on while you tackle dinner? That was my day today. I need to shop for fresh veggies, but still had a few sad-looking tomatoes, some cilantro, and one lone red onion rattling around. Here's what I made:
* Combine two chopped tomatoes, 1/4 red onion, as much chopped cilantro as you have/like (I like a LOT of cilantro)
* Add a couple of shakes (probably about 1/4 tsp) Chili Lime Sansel
* Add a couple of pinches (again, probably about 1/4 tsp) Margarita Rimmer
* Throw in some Poco Picante Salsa (about 1/2 tsp if you like a bit of a kick, but not crazy-hot)
* Squeeze 1/2 lime if you have it (I didn't, so I put 1 tsp of lemon juice in instead)
