My kids were craving comfort food tonight, so I threw together their favourite (tuna casserole). I like it too, but there is only so much cheesy-carbohydrate goodness one can - should - eat. So, I balanced out my dinner by throwing together a simple, yet delicious, salad. Let's face it, anytime you can put candied pecans on something and call it "salad", it's a winner.
* your favourite greens (I had iceberg lettuce in my fridge; not my favourite, but it did the trick)

* dried cranberries
* candied pecans (I like to quickly candy mine in butter & brown sugar in a frying pan.)
* 1 tbsp mayo with 1 tsp Caesar Salad Dressing mix.
