And now for something completely different - pan-fried devilled eggs. They don't look all that pretty in the photos, but they looked better "live" and were definitely tasty. A rather unusual combination of hot & cold - definitely serve with lettuce as the crunch adds texture.
* 8 hard-boiled eggs cut in half and yolks removed
* 1-2 tbsp mayo, 1-2 tsp Sweet & Spicy Mustard, 1-2 tsp Chipolte, Cheddar & Bacon dip mix. Mix together and fill egg white halves; level these if planning to pan-fry.
You could stop here or pan-fry gently (face-down) for 2-3 minutes (I used 1 tsp margarine). The yellow bubbling in the photo is not fat, it's the egg yolk mix, which seems to almost caramelize on the eggs.
