Tonight, I had a little bit more time to prepare dinner, so I pulled together some of my favourite flavours for this baked pasta dish. This took three pans, but I'm sure I could do it in two if I were a bit more creative.
Pot #1 - cook your favourite pasta (I made GF fusilli). Drain & put back in pan (I used my Everything Pan as this was also going into the oven)
Frying pan -
#1 - if using fresh spinach, boil about 3 tbsp water, add your spinach, turn off the heat, and cover the spinach. Let cook for about 3-4 minutes, and then drain.
#2 - saute two diced onions and 2-4 diced garlic cloves, depending on how much you like garlic, in 2 tbsp olive oil. Carmelize these by sauteing for at least 15 minutes on medium-high heat. Add 3-4 sliced bacon, cut into small pieces, and cook for about 5-10 minutes more. Add some sliced or diced mushrooms. Add cooked spinach (or 1 package thawed spinach if using) and 1/4 cup white wine. Don't forget to pour the cook a glass as well!
Saucepan - melt 4 tbsp butter, add 4 tbsp GF flour and cook for one minute, stirring the entire time. Add 2 cups prepared Chicken Bouillon, 2 cups cream, and a bit of lemon zest. I also added some Maple Bacon Pepper, just because. Let boil and reduce heat to thicken for about 5 minutes. Add 1/2 shredded parmesan cheese.
To assemble:
1) Place the pasta in the Everything Pan
2) Add some cubed mozzarella cheese if you like things cheesy (I do!)
3) Pour the veggies over the pasta & cheese and stir to mix
4) Pour the cream sauce over top
5) Add more cheese on top, if you like
Bake at 350 degrees for about 20 minutes. While this is cooking, throw together a green salad with cucumbers & tomatoes and our Italian Dressing. Serve with a glass of white wine. A great start to the week!
