This is the result:
- 2 tsp each water, lemon juice, and olive oil (whisk to emulsify)
- 2 tbsp Lemon Basil Aioli seasoning
- 3/4 cup - 1 cup light mayonnaise
Add to cooked and cooled potatoes (I also added chopped pickles).
I do love the CCB Potato Salad I wrote about a few weeks back, but today I wanted something on the citrus side. I looked at the Lemon Dilly Vinaigrette recipe, and then decided to pull out my favourite "Lemon Basil Aioli" and see what I could do. This is the result:

What kind of pickles did you add? I am just waiting for the potatoes to cool :)

I used garlic dill pickles, but probably almost anything would work other than sweet pickles. I hope your salad was delicious!
