Le Taj Chickpeas & Tofu
* hydrate 2 tbsp Le Taj Secret Sauce in 1/4 cup water & 1/4 cup oil, toss into Everything Pan, and saute 1/2 medium onion (diced)
* cook until onions are transparent
* add 1 block firm tofu (cubed) and cook for about a minute
* add one can chickpeas with liquid and cook for about 5 minutes
* add diced tomatoes & chopped spinach
Coconut Rice:
* boil 1.5 cups water; while the water is heating, rinse 1 cup basmati rice a few times
* add rice, 2 tsp Le Taj (not hydrated), 1 can coconut milk, 1/4 cup raisins, and a cinnamon stick
* bring back to a boil, the reduce to a simmer for 10 minutes
