Marinade for chicken: Mix 2 tbsp Mango Curry dip in 1 cup coconut Greek yogurt & the juice of 1/2 lime. Reserve some for dressing. Cook 1 chicken breast in steamer (3-5 minutes) then chop for salad.
Layer chopped lettuce, halved cherry tomatoes, diced cucumber, diced red onion, chopped avocado, feta cheese, grapes, almonds, cooked chicken.
Dressing: add 1 tbsp red wine vinegar, 1 tsp honey, salt & pepper to reserved marinade. Whisk and drizzle on salad.
