What do you do when you open the cupboard and realize you are out of Epicure's Hot Buttered Rum mix? First, you panic just a wee bit. Then, you realize an evening sleigh ride demands hot drinks of some kind, so you start searching online and improvising. This recipe is based on a Food Network recipe by Rachel Ray.
- In a large (4-cup) measuring cup, place the following:
- 1/4 cup honey (I had to melt mine as it was all crystallized)
- 1/2 cup butter cut into chunks
- 3/4 cup or so brown sugar
- 1 tbsp Epicure's Chai Spice
- Mix with an immersion blender, and then add:
- 2/3 cup Spiced Rum
- 2 cups boiling water
- Use the blender again. Pour a sample into a cup with a cinnamon stick and test... just to be sure. Pour the rest into a thermos, put on your toque and gloves, and head out into the winter night.
