As I mentioned a few posts ago, I've been trying to include more kale in my diet. Not always the easiest, as kale can be stringy and tough if not prepared correctly. Luckily, preparing it quickly and easily can be done, as long as you are okay with giving it a little love - a massage that is.
1) String the kale from the ribs and rip or cut into small pieces.
2) Grind a bit of Epicure's Sea Salt on the kale to take away some of its natural bitterness (this step makes a HUGE different to me)
3) With your hands, massage the kale. It won't take too long before you can see and feel the difference. (Keep one piece out of the bowl so you can see this for yourself. The kale will start to feel softer and the green colour will deepen and intensify. You don't have to do this for very long (maybe a minute or two at the most.)
4) Add your favourite dressing. I like the Balsamic (as always) but with a bit extra vinegar added to it. The strong flavour of the kale is perfect for a great dressing with some kick to it, so don't be afraid to use flavour her.
5) Add your toppings. Tonight, I added the following:
* pumpkin seeds
* dried cranberries
* pecans
* hazelnuts
* fresh peaches
* cooked pork
Use your imagination and enjoy this amazing "superfood." Hail to the kale!
