Loosely based on a recipe from Oh She Glows. this delicious vegan recipe takes about 30 minutes to prepare and 20 minutes to cook in the oven.
Start by boiling a couple of cut up sweet potatoes. While those are boiling, saute onion in El Dorado secret sauce. add sweet potatoes, drained black beans, corn, and some raw spinach. Cook Epicure's Enchilada Sauce (a double recipe would be good if you like lots of extra sauciness). Combine sweet potatoes, veggies, and sauce and roll into gluten-free tortillas (make sure you warm them up a wee bit first).
Place in a casserole dish and cover with leftover sauce. Bake at 350 for 20 minutes or so.
