It's a cold, rainy day; the perfect day for a bowl of soup with some fresh bread. Here's a simply, delicious soup that will warm you down to your toes.
- Melt 2 tbsp butter in a large pot
- Add: 1 peeled & chopped carrot, 1 diced celery stick, 2 peeled & diced potatoes, and 1 peeled, seeded, and cubed butternut squash. Cook for about 5 minutes, stirring often.
- Sprinkle 1/4 cup Epicure's Vegetable Bouillon on top
- Add three cups water; stir
- Cook on medium for about 30 minutes, stirring occassionally, until veggies are soft.
- Blend with immersion blender; season, if desired, with salt & pepper.
- Serve with Herb & Garlic bread & a green salad.
