This is a simple vegan, gluten-free dinner that I whipped together in less time than a trip to McDonald's.
While boiling your favourite pasta, mix together the following in a food processor:
Mix with cooked and drained pasta. Add fresh tomatoes and serve. (I think pine nuts would taste awesome on this as well.)

- 2 ripe avocadoes
- 1 tsp lemon juice
- 2 tsp Pesto (you could also use fresh basil here, but I didn't have any on hand)
